Fresh Mango Raspberry Bellini

Ingredients

  • 1 cup Sugar
  • 1 cup Water
  • 1-2 mint tea bags
  • 1 ripe mango Peeled, boned, diced
  • 1 tablespoon Raspberries, Chilled
  • 1 bottle prosecco Cooled

Garnish:

  • 1 fresh mango wedge
  • 1 sprig of fresh mint

Instructions

  1. To make mint simple syrup: Combine sugar and water in a small saucepan, heat until sugar melts.

  2. Remove from heat, add the tea bag and let steep for 5 minutes.

  3. Cold syrup.

  4. (Simple syrup can be stored in the refrigerator for a month.)xa0

  5. In a food processor, puree diced mango until smooth.

  6. To assemble, place the raspberries in a glass.

  7. Top with 2 tablespoons mint simple syrup, mango puree, and Prosecco.

  8. Garnish with a slice of mango and mint.
